Our process begins with client meetings to draw out what they seek for their markets. We focus on major and minor flavour profiles, acidity levels, overall and residual sweetness and textural qualities. With blending, following the client brief for flavour profile, we fold the raw ferments into finished wines, bringing life and character to the wine.
